Breakfast is my favorite meal of the day. Period. So, naturally coming home from class at around 5:30 and baking muffins is holly appropriate. But this time, I was out of milk and eggs and butter...time to get scrappy in the kitchen.
Ingredients:
- splash of oj
- dark chocolate chip
- handful of chopped almonds
- five chopped dates
- 1 2/3 cup of flour
- 1/2 cup of brown sugar
- 1/4 cup of granulated sugar
- 1 cup of carrot
- teaspoon of baking soda
- dash of vanilla
Recipe:
- Boil carrots till tender.
- Drain and blend.
- Mix all ingredients in a bowl
- Place batter in baking dish of choice, and bake for 15 minutes (give or take) at 350 degrees
