Vegan Morning Glory Muffins


 
Breakfast is my favorite meal of the day. Period. So, naturally coming home from class at around 5:30 and baking muffins is holly appropriate. But this time, I was out of milk and eggs and butter...time to get scrappy in the kitchen.
Ingredients:
  • splash of oj
  • dark chocolate chip
  • handful of chopped almonds
  • five chopped dates
  • 1 2/3 cup of flour
  • 1/2 cup of brown sugar
  • 1/4 cup of granulated sugar
  • 1 cup of carrot
  • teaspoon of baking soda
  • dash of vanilla
Recipe:
  1. Boil carrots till tender. 
  2. Drain and blend.
  3. Mix all ingredients in a bowl
  4. Place batter in baking dish of choice, and bake for 15 minutes (give or take) at 350 degrees
