Petite Spinach and Goat Cheese Omelet

 

I've never been much for the yolk. 

Ingredients:
  • handful of spinach
  • handful of chopped onion
  • salt and pepper
  • two egg whites
  • a teaspoon of goat cheese
Recipe:
  1. Sautee spinach, onion, seasoning together till soft
  2. Reduce heat and cool
  3. Add dairy product
  4. Place veggie mix in muffin tins, and ensconce with egg
  5. Bake for 5-7 minutes (give or take) at 350 degrees
And of course, share with someone you love.
